Lemon Blueberry Bread!

 

Hey Friends!!

Y'all I woke up a chilly 55 degrees this morning! Fall is definitely in the air!! I think I may just haul in the Fall decor from the basement this weekend!! I'm excited!! I love all things blankets, jeans, boots, cute jackets, pumpkins, corn mazes, hayrides, festivals, it's such a blast!! 

So, I thought on this chilly morning, it'd be the perfect time to share one of my favorite bread recipes with ya'll!! Our number one pick, for soooo many years, has always been banana bread with chocolate chips, or pumpkin bread with chocolate chips! And I'll definitely share the pumpkin recipe soon!! But, I'm trying to be more adventurous in the baking realm, and make more than cakes & cookies, and try more breads and pies!! My husband is a huge lover of all things lemon and blueberry, so I knew when I spotted this yummy recipe in the Magnolia Journal, that he would drool over it!! I actually made the lemon blueberry and a banana chocolate chip, because why not. Hahaha!

This one edition was filled with a variety of delicious quick breads! Like banana bread, a cinnamon nut swirl I'm dying to try, and this lemon blueberry bread! The scent of bread baking in the oven really is the most glorious, comforting, homebody aroma ever!! And bonus, yummier than ever!! Don't forget the blueberries!!

 

 

So, drum roll!! Here is the recipe for the

LEMON BLUEBERRY BREAD! 

Ingredients:

  •  Non stick baking spray
  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 1 tsp lemon zest
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 3/4 cup blueberries

Directions:

  1. Preheat oven to 350 degrees. Coat the bottom of a loaf pan with non stick baking spray.
  2. In a large bowl, stir together flour, sugar, baking powder, and salt. Stir in lemon zest. 
  3. In a smaller bowl, mix together eggs, milk and butter.
  4. Add egg mixture to flour mixture. Stir just until moistened. Batter should be lumpy. 
  5. Add in blueberries. Spoon batter into prepared loaf pan, spreading evenly.
  6. Bake 60-70 minutes or until toothpick inserted in the center no longer sticks and comes out clean.
  7. If necessary, to prevent over-browning, cover loosely with foil in the last 15 minutes of baking.
  8. Set on counter to cool. 
  9. For lemon glaze, whisk together a bit of fresh lemon juice into a cup of powdered sugar until it is runny. Brush onto warm loaf! 
  10. Enjoy!!
