๐ŸŒฟ๐ŸŒธHappy Foodie Friday babes!! Iโ€™m still squeezing in summer desserts, because theyโ€™re just so dang good!! ๐Ÿ‹Anything lemon is always delish for me!! And so needed when itโ€™s scorching outside! This is a new family favorite!! Enjoy!! ๐Ÿ˜˜๐Ÿ‹


๐Ÿƒ๐Ÿ‹ โ„’โ„ฏ๐“‚โ„ด๐“ƒ ๐’ฏ๐’พ๐“‡๐’ถ๐“‚๐’พ๐“ˆ๐“Š ๐Ÿ‹๐Ÿƒ

๐“˜๐“ท๐“ฐ๐“ป๐“ฎ๐“ญ๐“ฒ๐“ฎ๐“ท๐“ฝ๐“ผ :
๐Ÿƒ8 oz. mascarpone cheese
๐Ÿƒ8 oz. cream cheese
๐Ÿƒ1 package (3.4 oz) instant lemon pudding mix
๐Ÿƒ1 cup 2% milk
๐Ÿƒ1 tsp lemon extract
๐Ÿƒ2/3 cup lemon juice
๐Ÿƒ3 TBSP sugar
๐Ÿƒ24 crisp ladyfinger cookies
๐Ÿƒ2 tsp grated lemon zest

๐Ÿ‹1. Make sure cheeses are at room temp! Beat the two together first. Then add milk, pudding mix, lemon extract, beat on mediums speed until all blended.
๐Ÿ‹2. Whisk lemon juice & sugar in separate bowl until sugar is dissolved. Quickly dip 8 ladyfingers into juice, shake excess and line in single layer in an 8โ€ dish.
๐Ÿ‹3. Spread a third of the mascarpone mixture over ladyfingers.
๐Ÿ‹4. Repeat those steps 2 more times to create your layers.
๐Ÿ‹5. Sprinkle lemon zest on top of mascarpone top layer.
๐Ÿ‹6. Refrigerate, covered, for at least2 hours before serving. Enjoy!!
